For 4 persons


Ingredients:


600g Fillet of Pork
200g Bacon
500g Potatoes
150g Onions
250g White mushrooms fresh or frozen
250ml Cream
Some fresh parsley
Some oil for frying
Salt, pepper, cumin


Preparation:


Slice the fllet of pork into 8 pieces. Wrap them with sliced bacon season it with salt and pepper.
Fry the medallions in a pan with some oil for 2 min on each side and then put the medallions into a preheated oven for 8 min by 180 degrees.
Wash and peel the potatoes and dice them, peel and slice the onions into small cubes, clean and dice the white mushrooms.
Sautee the onions in a pan until the onions get a slight colour. Add the potatoes and the white mushrooms into to pan and roast everything together.
Add the cream and let it boil until the potatoes are tender.
Season the ragout with salt, pepper and cumin to your liking, adding some freshly chopped Parsley.
Arrange the ragout at the center of a plate and place the pork medallions on top.
Serve this dish with a dark Red wine sauce.
