Ingredients for 8 persons:
500ml fresh cream
150 gr. sugar
Juice of one lemon
80gr. strawberry sauce
80gr. vanilla sauce
8pc chocolate garnish
8pc mint leaves
10gr. melted dark chocolate
10gr. cacao powder
100gr. chocolate biscuit
Soak the gelantine in ice cold water for about 20 minutes.
Whip the fresh cream until foamy. Clean the strawberries
and mix half of this amount with the sugar and heat it up in
a medium size sauce pan at about 50° Celsius.
Next add the gelantine, lemon juice ,the whipped cream
and mix well. Slice the remaining strawberries and assemble
them on the inside of the dessert ring. Pour in the strawberry
mousse and cover it with a chocolate biscuit disk. Allow to set
in the refrigerator for approximately 3 hours and while waiting
you can pipe the melted chocolate decoration on the plate.
Fill the chocolate triangles with strawberry and vanilla sauce.
Place the dessert ring upside down on the plate and lift the
ring up about 3mm. Pipe the strawberrry sauce on top and
remove the dessert ring. Finally, garnish with a half straw-
berry, mint leave combination plus chocolate garnish and
